Creme Caramel |
Ingredients
For the Creme
-500ml whole milk
-1/2 a teaspoon of vanilla extract
-100g caster sugar
-2 eggs and four egg yolks
For the Caramel
-120g of caster sugar
-2 tablespoons of water
Instructions
-Preheat the oven to 150 degrees/gas mark 2
-Grease the ramekins with butter and set aside
For the Caramel-heat the sugar together with 2 table spoons of water in a sauce pan do not stir but rotate the pan from side to side till it becomes like a liquid golden brown syrup.Divide the liquid into the ramekins and swirl to ensure it covers the whole base of each ramekins.
For the Creme
-Pour the milk in a saucepan and add the vanilla extract and leave to simmer ensure it does not boil.
-In another bowl add the sugar and the eggs and whisk gently together
-Pour the milk into the sugar egg mixture ensure you stir continuously
-Skim foam from the top and pour into the ramekins
-Cover each one tightly and with foil and place in a baking tray filled 2/3 with hot boiling water
-Bake for 15 mins then remove the foil and bake for another 15 mins until the custard is set and wobbly in the center and leave to cool and refrigerate once it has cooled down.
-To serve use a sharp knife around the edge of each ramekin and invert onto a plate.
